Queso!

Yes, queso! I feel like it deserves an exclamation point after it because it’s just one of those comforting, delicious things that tends to go over really well at parties, and is simple and quick to throw together.

To get started all you need is three ingredients and a crockpot!

  • 32 oz package of Velveeta (yes, the large one 🙂 )
  • 14 oz can Rotel
  • 1 small yellow onion, diced

Simple ingredients

I typically buy the original Velveeta, but there are other kinds and I think they would be fun to try out. There’s a Queso Blanco flavor that would probably be really delicious. I also buy the Original Rotel, but again, there’s a ton of varieties out there so it could be fun to mix it up and try some new ones!

One of the great things about queso is that it’s totally customizable. Want to add a little heat? Throw in a diced jalapeño! Kick it up another notch and add some Tabasco, or another type of hot sauce. My favorite might be the chili garlic variety from Cholula.

I typically slice up the Velveeta and put it in the microwave for just a few seconds to soften it up before adding it to the crockpot. I also like to sauté the onion before adding it to the crockpot as well. After adding all the ingredients to the crockpot set it on low or high, depending on when you want to have it ready, in order to melt the cheese. Then once you’re ready to serve, leave it on the warm setting, and be sure to give it a stir every now and then.
