Since I met Ollie, who is half Cuban, 5 and a half years ago and married him 6 months ago (HOLY COW, time flies), Cuban delicacies have been pretty prevalent in our household. This meal is a great blend of salty, spicy and sweet and so easy to make after a long day at work!
Please refer to my Grilled Chicken Dinner post with how I cook a juicy chicken breast and get those beautiful grill marks. Only addition is rubbing the chicken with this cuban chicken rub (which you can either make ahead and store in an airtight container or make on the spot!) right before grilling!
- one can Goya Black Beans
- 1/2 medium Vidalia onion, diced
- 1/2 tsp garlic powder
- 1 tsp of Cholula hot sauce (or to taste, depending on how much you like heat)
Combine all ingredients in a medium sauce pan. Place on low-medium heat until onions are soft and beans are hot.
As for the plaintains, I just popped a box of the Goya frozen plaintains (which can be found at your local supermarket in the International portion of the freezer aisle) into the microwave.
You are also welcome to add rice to this, I have just been working on staying away from the carbs lately!
