Special K Loaf

This is a family recipe that I grew up on. My mother was a vegetarian when I was young and this was in the regular dinner rotation.

When I try and explain what Special K loaf is, I often get confused, amused, and sometimes disgusted expressions in return. I can see how “vegetarian meatloaf” might confuse people, but that is the best way I have of describing it. However, upon trying it, no one has ever denied how delicious it is. The best part is you mix all the ingrediants together in 1 large bowl, and then transfer to a pan and cover with foil. Only 2 dirty dishes, and 5 min of prep!


  • 5 cups Special K cereal
  • 4 eggs
  • 1/4 cup vegetable oil
  • 32 oz cottage cheese
  • 1/2 cup chopped pecans
  • 1/4 cup dehydrated onions
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp coriander
  • 1/2 tsp cumin
  • 1/4 tsp cayenne
  • 1/4 tsp celery seed
  • 1/2 tsp thyme
  • 1/2 tsp sage
  • 1 can cranberry sauce


  1. Set oven to 350 degrees.
  2. Mix all the ingredients except the cranberry sauce in a large bowl.
  3. Transfer to a greased 9×13 inch pan and cover with foil.
  4. After 30 minutes remove the foil and bake for another 15 minutes.
  5. Serve with slices of cranberry sauce
