Banana Nut Muffins

I always buy bananas with the intention of eating them for breakfast, but when I am running out the door in the morning I never seem to want one. Several days go by until I realize my bunch has turned brown and soft and I have to make banana bread muffins immediately to avoid wasting them.

There are tons of recipes out there for banana bread, and honestly I have yet to come across one that I dislike. But this is one of my favorites and has a bit of coffee for all you caffeine fans out there.


  • 1/3 cup butter, softened
  • 1 1/2 cup all purpose flour
  • 3 very ripe bananas, mashed
  • 1/4 cup brown sugar
  • 1/4 cup white sugar
  • 1/4 cup walnuts, chopped
  • 1/4 cup chocolate chips
  • 2 eggs
  • 1 tbs coffee
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • Dash of nutmeg
  • Dash of salt


  1. Preheat oven to 350 degrees
  2. Add softened butter, bananas, brown and white sugars, eggs and coffee together.
  3. Add all remaining dry ingredients together, except walnuts and chocolate chips
  4. Mix dry ingredients into wet ingredients, about a third at a time until just mixed.
  5. Fold in walnuts and chocolate chips.
  6. Grease or line muffin pan and fill 2/3 full with batter.
  7. Bake for 20 min.
  8. Enjoy!
